Take a one-of-a-kind field trip to oyster oasis-Henderson Inlet's Community Shellfish Farm in Olympia. Start the day with hot coffee and doughnuts from Top Pot. Then it's time to walk the mudflats with Betsy Peabody, executive director of the Puget Sound Restoration Fund. She and her dedicated team will show you how to harvest, sort and clean your own oysters. Afterward, enjoy the fruits of your labor with a gourmet BBQ on the beach. The enticing menu features Bourbon BBQ Oysters, sliders, fresh chowders and salads, plus burgers for the kids. You'll also enjoy Fish Tale Organic Ales and wine from Wooldridge Creek Winery. (Fun fact: Some of the oysters you harvest will be returned to the water, then served fresh at Elliott's Oyster New Year Bash.)

Meet the Masters

Discover outstanding pairings of local oysters and local wines. Our region's expert oyster growers will be on hand to work their shucking magic and offer tastes of their undersea treasures. Meanwhile, Winemaker Kevin Cedergreen, owner of Cedergreen Cellars, will present his finely crafted wines, including his 2007 Sauvignon Blanc-winner of the 2009 Pacific Coast Oyster Wine Competition. For every glass of Cedergreen Cellars wine ordered during the event, Elliott's will donate an additional $1 to the Puget Sound Restoration Fund.back to top
